Holiday Ordering

Let the butcher and the baker help make your holiday table a memorable one!

Green button Farms is raising Standard Bronze turkeys for us on their farm in Rougemont.  They are an old slow-growing American breed of turkey that is being brought back for its excellent flavor and beautiful appearance.  The turkeys will be processed on the farm they are raised on and will be brought to us that same day.  This is an excellent chance to put a truly unique and flavorful bird on you holiday table!

v  Cost is $7.00/# We are taking a twenty dollar deposit at the time of order.

 

v  Size of the birds will be between fourteen and eighteen pounds.  At the time of order please tell us your desired weight and we will do our best to get you close to that.

 

v  Turkey Parts!  We can take a limited amount of orders for turkey parts.  This will be on a supply basis.  Please tell us what you are looking for and we will try to pair you with someone who prefers the opposite color meat.

 

v  Pick-up.  We will give you a call/email when we know the exact date that your bird will be ready for pick-up.  Depending on the amount ordered we are expecting to have three pickup days the week before Thanksgiving.

 

Holiday Hams!

 

We offer two types of ham for the holiday season.  Our hams come pre-cooked and vacuum packaged.  You can either slow roast them in the oven to heat them or heat them directly in the bag.  The Hampshire ham will take a good glaze well while the Suffolk ham needs no condiment except some good mustard.  We ask for a two week pre-order and a $20 deposit on our hams as they are made to order!

v  Hampshire Hams

  • This is our version of a smoked holiday Ham.  Its recipe is derived from an old English recipe that uses cider and molasses as the brine for the pork.  It is then smoked to give it a good flavor and golden color.
  • The Hampshire Ham is available two ways:
    • “City Ham” – The bone-in hock end of the leg.  Great for roasting and endless leftover meals, this will make an excellent presentation at your holiday table.  Give us your target weight and we will do our best to get close to it.  Sizes available are between 9 and 15 pounds.  Cost of this ham is $10.99/#
    • Boneless Petite Ham- The boneless version of the above ham.  Available in sizes of 5 to 7 pounds.  Cost of this ham is 12.99/#

v  Suffolk Hams

  • These hams take the word “Ham” to a new level!  They are made from the shoulder end of the loin, one of the most flavorful cuts on the animal.  (You may recognize it by its Italian name, the “Coppa”)  It is first cured with salt and then soaked in a marinade of black beer, molasses and spices.  The Suffolk ham will definitely make your holiday table a unique and memorable one!
    • The Suffolk ham is available in one size which is between 4 ½ and 5 pounds.  The cost is $14.99/#

Holiday Roasts:

We have many different options for you if a roast is what you would like on your holiday table.  Please place your order well in advance to ensure availability.   If you have another cut of meat in mind, don’t hesitate to ask!                                 

v  Porchetta: If you are looking for and Italian twist to your holiday party we are also offering rolled porchetta’s.   Porchetta is an Italian dish that is the pork belly rolled around the pork loin.  It is seasoned on the inside with fennel, garlic, oregano, chili flake and pork liver.  The Porchetta can be slow roasted to achieve a moist interior and then put in a hot over to crisp the skin.  Porchetta’s can be ordered from 3 to fifteen pounds and are $12.99/#

v  Pork Rib Roast:  The pork rib roast/rack of pork is the pork equivalent of a standing beef rib roast or a rack of lamb. This cut makes a show-stopping centerpiece for an elegant dinner.  Rib roasts are available by weight from 2 to 10 pounds.  Their cost per pound is $7.99

v  Boneless Pork Loin:  While it lacks the flavor possibilities of its bone-in counterpart, the boneless pork loin does open up great possibilities for stuffing the middle and is a bit easier to slice.  Boneless pork loins are available by weight from 1 to 10 pounds.  Their cost per pound is $8.49

v  Beef Short Ribs:  Slow cooked dishes are a great way to go for the holiday table.  Cooking them a couple days in advance and resting them in their cooking liquid heightens their flavor and reduces stress on the day of your gathering.  We can french them for you for a more elegant appearance. Cost for Short Ribs is $7.99/# ($8.49/# frenched)

v  Beef Rib eye Roasts: We will have these available in limited supply.  Place your orders well in advance and we will try to accommodate.  Bone-in Rib Roasts are $17.49/#

v  Beef Tenderloin: This is an elegant way to celebrate your holidays.  Beef tenderloins are prized for their tenderness and their ease of cooking.  One tied beef tenderloin roast weighs roughly 3 pounds.  Beef Tenderloin Roasts are $22.49/#

Sweets:

Apple and Sour Cherry Galette:  If you love crust equally as much as the filling a galette would be a great choice for the holidays.  We can vary the sizes of the galette to fit your needs.  One to two person size $5, 8 inch which would serve 6- $20, 10 inch would serve 8-10 for $28 and the 12 inch serving 12-14 for $35.  We can also do varying flavors like Apple and Candied Meyer Lemon or Apple Currant.  Or just Apple!

Chocolate Ganache Tarts:  Can be made bittersweet or semisweet according to your chocolate percentage preference. These tarts have a flaky shortbread crust and the filling is a rich chocolate ganache.  We can make individual tarts that are great for sharing for $4.25 or a 10 inch tart which can serve 10-12 people for $40. This dessert is great with a dollop of freshly whipped cream.

Lemon Meringue Tarts:  Tangy lemon curd in a shortbread crust with a fluffy meringue topping.  We can make individual tarts for $4.25 or a 10 inch tart which can serve 8-10 people for $35.

Fresh Ginger Cake:  Spicy and sweet cake made with molasses, fresh ginger and cloves.  We can make 6 inch cakes that will serve 6 people for $20 and 8 inch cakes serving 8-10 people for $28.  This dessert pairs nicely with a dollop of freshly whipped cream, ice cream or fresh citrus.
